Ingredients
2 tablespoons thinly sliced green onions
1 tablespoon olive oil
1 tablespoon dijon mustard
2 teaspoons fresh lemon juice
⅛ a teaspoon of salt
¼ teaspoon black pepper
1 5-ounce can of white tuna, steamed, dried and flaked
1 (3 oz) slice of French bread, halved lengthwise and toasted
4 (1/4-inch thick) plum tomato slices
¼ cup (about 1 ounce) grated Swiss cheese
2 teaspoons thinly sliced green onions (optional)
To make
Delicious, lightly toasted melted tuna is just the dish you need to satisfy your crazy lunch cravings. You can serve them with gherkins (small pickles) or with carrot and celery sticks and a little light ranch dressing on the side for dipping.
Preheat the broiler.Combine the first 6 ingredients in a medium bowl. Add the tuna; mix gently.Hollow out the top and bottom halves of the bread, leaving a 1-inch-thick shell; leave the torn bread for another use. Place the bread, cut sides up, on a baking sheet. Bake for 1 minute or until lightly browned.Spoon the tuna mixture evenly over the bread tins; top each with 2 slices of tomato and 2 tablespoons of cheese. Bake for 2 minutes or until the cheese is melted. If desired, sprinkle each sandwich with 1 teaspoon of green onions.
