Turkey and Potato Soup with Bacon

Ingredients
1 tablespoon canola oil
1 ½ cups chopped onion (about 1 large onion)
1 cup chopped celery
2 carrots, halved lengthwise and thinly sliced (about 1 cup)
1 oz sliced canadian bacon
3 cups low-sodium, fat-free chicken stock
3 cups chopped cooked turkey (about 1 pound)
2 ½ cups mashed boiled peeled potatoes for baking
1 tablespoon chopped fresh sage
¼ teaspoon freshly ground black pepper

This hearty soup with two types of meat and baked potatoes will keep your family warm on a cold evening.
Heat the oil in a roasting pan over medium-high heat. Add the onion, celery, carrot and bacon; cook for 6 minutes, stirring occasionally. Add the broth, turkey, potatoes, and chopped sage, stirring with a whisk until smooth; bring to a boil. Reduce the heat and simmer for 10 minutes. Add pepper. Garnish with sage sprigs if desired.
