8 thick slices deep-fried turkey breast, chilled
½ cup cranberry sauce
2 tablespoons pure maple syrup
¼ teaspoon kosher salt

Turn your post-Thanksgiving turkey, cranberry sauce, and sweet potatoes into this awesome brunch dish with meat and savory options. No one will complain about leftovers when they look so good.
Prepare the waffles: Preheat the oven to 200° F. Whisk together the milk, sweet potatoes, brown sugar, butter, and eggs in a medium bowl. Whisk together the flour, baking powder, pumpkin pie spice, baking soda, and salt in a large bowl. Add the milk mixture to the flour mixture and stir until smooth. Preheat the waffle iron to medium heat according to the manufacturer's instructions. Place 1/3 cup of batter in a waffle iron and cook until golden brown according to the manufacturer's instructions. Transfer the waffles to a plate and keep warm on a side-lined baking sheet in the preheated oven.Prepare the turkey: Heat the oil in a medium saucepan over medium-high heat to 375°F. Whisk together the flour, salt, pepper, and paprika in a shallow bowl. Put the buttermilk in a second shallow dish. Roll each slice of turkey in the flour mixture and dip in the buttermilk. Roll each slice again in the flour mixture, lightly shaking off any excess. Cut into 2-3 slices in batches, fry the glazed turkey slices until golden brown, about 2 minutes, allowing the oil to heat up to 375 °F between servings. Transfer the turkey to a plate lined with paper towels to dry.Make the syrup: Whisk together the cranberry sauce, maple syrup, and salt in a small bowl. Cook in the microwave on high power for 45 seconds, stirring after 20 seconds.Serve the turkey slices on top of the waffles; drizzle with syrup.
