Turkey Cutlets with Lemon-Caper Sauce

Ingredients
⅓ cup all-purpose flour
½ teaspoon salt
½ teaspoon pepper
1 pound turkey patties
3 tablespoons butter, divided
1 tablespoon olive oil
½ cup dry white wine
3 tablespoons fresh lemon juice
2 garlic cloves, minced
2 tablespoons chopped fresh flat-leaved parsley
2 tablespoons capers
Garnish: lemon wedges, sliced fresh parsley with flat leaves.
To make
Combine the flour, salt and pepper; roll the turkey in the mixture.Melt 2 tablespoons butter in a large skillet over medium-high heat; add the turkey and cook in batches of 1 1/2 minutes on each side or until golden brown. Transfer to a serving dish and keep warm.Add the white wine, lemon juice, and remaining 1 tablespoon butter to the pan, stirring to prevent any particles from forming from the bottom of the pan. Cook for 2 minutes or just until completely warmed up.Add garlic, parsley and capers; spoon over turkey. Decorate if desired. Serve immediately.
