Tuscan Chicken Soup

Ingredients

1 cup chopped onion
2 tablespoons tomato paste
¼ teaspoon freshly ground black pepper
⅛ a teaspoon of salt
1 15-ounce can of cannellini beans or other white beans, washed and dried
1 can low-sodium, fat-free chicken stock (14 oz)
1 7-ounce bottled red bell pepper, rinsed, dried, and cut into 1/2-inch chunks
1 pound boneless and skinless chicken thighs, cut into 1-inch thick slices
3 garlic cloves, minced
½ teaspoon chopped fresh rosemary
1 pack fresh spinach (6 oz)
8 teaspoons grated fresh parmesan cheese

To make

This recipe uses a variety of common pantry and refrigerator items. All you need to buy at the supermarket is fresh spinach and chicken thighs.
Combine the first 9 ingredients in an electric slow cooker. Cover and cook on high heat for 1 hour. Reduce heat to low; cook for 3 hours. Add rosemary and spinach; cover and cook over low heat for 10 minutes.Ladle soup on plates; sprinkle each portion with cheese.
