Ingredients
7.9 oz all-purpose flour (1 3/4 cups)
¾ cup granulated sugar
2 ½ teaspoons baking powder
¼ teaspoon salt
¾ cup low-fat ricotta cheese
½ cup water
¼ cup olive oil
1 tablespoon grated lemon zest
2 tablespoons fresh lemon juice
1 large egg, lightly beaten

2 tablespoons turbinado sugar

The use of ricotta cheese provides a light and lush texture, resulting in a moist and delicious muffin. Try these lemon treats for breakfast or as a sweet snack.
Preheat the oven to 375 degrees.Spoon flour into dry measuring cups; smooth with a knife. Combine the flour and the next 3 ingredients (with salt added); make a well in the center. Combine the ricotta and the following 5 ingredients (with the egg). Add the ricotta mixture to the flour mixture, stirring until it becomes moist.Place 12 muffin tins in muffin tins; brush with cooking spray. Spread the batter over the muffin tins. Sprinkle the dough with turbinado sugar. Bake at 375 degrees for 16 minutes or until a wooden stick inserted in the center comes out clean. Cool for 5 minutes in the pan on a wire rack.
