Tuscan Pork Chops

Ingredients
¼ cup all-purpose flour
1 teaspoon salt
¾ teaspoon seasoned pepper
4 boneless pork chops, 1 inch thick
1 tablespoon olive oil
3-4 garlic cloves, minced*
⅓ cup balsamic vinegar
⅓ cup chicken broth
3 plum tomatoes, peeled and diced
2 tablespoons capers

Try the Tuscan-style pork chops to make a rustic Italian-inspired dish that is impressive and yet ready in the blink of an eye.
Combine the first 3 ingredients in a shallow bowl; roll the pork chops in the flour mixture.Saute pork chops in preheated oil in a large nonstick skillet over medium-high heat for 1-2 minutes on each side or until golden brown. Remove the chops from the pan.Add the garlic to the pan and simmer for 1 minute. Add the vinegar and stock, stirring to remove particles from the bottom of the pan; add the tomatoes and capers.Return the pork chops to the pan; bring the sauce to the boil. Cover, reduce the heat and simmer for 4-5 minutes or until the pork is cooked through. Serve the pork chops with the tomato mixture. Decorate if desired.* you can substitute 1 tablespoon of crushed garlic in bottles.
