1 tablespoon grated lemon zest
½ teaspoon salt
½ teaspoon freshly ground black pepper
2 minced garlic cloves
1 pound pork tenderloin, peeled and cut into 1-inch-thick cubes
16 (1 inch) red bell pepper slices
16 (1 inch) yellow bell pepper slices

Prepare the grill over medium-high heat.Combine the olive oil, grated lemon zest, salt, pepper, and minced garlic in a large bowl, mixing well. Add the pork; marinate at room temperature for 15 minutes, stirring occasionally.Line the pork and bell pepper alternately on each of 8 (8-inch) skewers. Place the skewers on a grill rack greased with cooking spray; cook for 10 minutes or until the pork is tender, turning occasionally.Sauteed chard: Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil to the skillet and stir to coat. Add 8 cups chopped Swiss chard, 1 tablespoon minced garlic, and 1/8 teaspoon salt; simmer for 5 minutes or until the chard wilts.
