Two-Cheese Mac and Cheese

Ingredients
10 oz large macaroni
2 tablespoons canola oil
3 minced garlic cloves
2 ¼ cups unsalted chicken stock (such as Swanson), divided
½ cup low-fat 2% milk
8 teaspoons all-purpose flour
4 ounces 1/3 lower-fat cream cheese
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Cooking Spray
3 ounces grated extra-spicy cheddar cheese (about 3/4 cup)
To make
Treat yourself to macaroni with two cheeses and cheese — our lighter version of your favorite Comfort Food dish. Since unsalted broth is used to make pasta with two types of cheese, it does not add much sodium.
Cook the pasta according to the directions on the package, without adding salt or fat; strain. Set aside.Preheat the grill to high heat.Preheat a roasting pan over medium-high heat. Pour the oil into the pan; stir to coat. Add the garlic to the pan; cook for 3 minutes or until the garlic is fragrant, stirring frequently (do not brown). Stir in 1 cup broth; bring to a boil. Cook for 1 minute. Combine the remaining 1 1/4 cups broth, milk, and flour; whisk until the flour is dissolved. Add the milk mixture to the garlic mixture, stirring with a whisk. Bring to a boil; cook for 5 minutes or until the mixture begins to thicken. Remove the milk mixture from the heat; add the cream cheese, stirring until smooth. Season with salt and pepper. Add the cooked pasta to the milk mixture, stirring to coat. Let stand for 5 minutes. Pour the pasta mixture into a 2-liter baking dish greased with cooking spray. Sprinkle the pasta mixture evenly with the cheddar. Bake for 3 minutes or until the cheese is melted and starting to brown. Let stand for 5 minutes.
