Two-Cheese Penne with Chicken and Spinach

Ingredients
8 oz raw instant penne (such as ronzoni)
Cooking Spray
12 oz skinless and boneless chicken patties
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 tablespoon extra virgin olive oil
7 oz fresh spinach
¼ teaspoon ground red pepper flakes
2 garlic cloves, minced
1 tablespoon lemon juice
2 ounces fresh grated pecorino Romano cheese (about 1/2 cup)
2 ounces 1/3 cup lower-fat cream cheese (about 1/4 cup)

To balance the dish, serve this juicy pasta with a crunchy romaine lettuce and a bright sour dressing.
Prepare the pasta according to the instructions on the package, without adding salt or fat. Drain in a colander over a bowl, reserving 1/4 cup water for cooking the pasta.Preheat a large skillet over medium-high heat. Brush the mold with cooking spray. Sprinkle the chicken with salt and pepper. Transfer the chicken to the skillet; cook for 3 minutes on each side, or just until tender. Remove the chicken from the pan; thinly slice across the fibers.Return the skillet to medium-high heat. Add the butter; whisk to coat. Add the spinach, red pepper and garlic; cook for 3 minutes or until the spinach wilts. Add the boiled macaroni, macaroni water, chicken, lemon juice, and cheese to the pan; stir to coat. Cook for 1 minute or until the cheese is melted. Serve immediately.
