Veggie Tostadas with Black Beans and Easy Guacamole

Ingredients

2 ripe peeled avocados, mashed into a coarse puree
2 tablespoons fresh lime juice
½ teaspoon salt
2 teaspoons olive oil
1 large garlic clove, minced
⅓ cup organic vegetable broth
2 cans of black beans (15.5 oz each), rinsed and dried
6 toasted tostada shells 6 inches thick
3 ounces grated Monterey Jack cheese (about 3/4 cup)
1 ½ cups shredded lettuce leaves
¾ cup fresh salsa

Here's another recipe that every family member can make to their liking.
Combine the avocado, lime juice, and salt in a medium bowl. Cover the surface of the guacamole with plastic wrap.Preheat a medium saucepan over medium-high heat. Add the butter; stir to coat. Add garlic; cook for 1 minute. Add the vegetable broth and beans. Reduce the heat to medium-low; cover and cook for 5 minutes or until completely warmed through. Remove the pan from the heat; mash the beans to the desired consistency.Spread about 1/4 cup of the bean mixture on each tostada pan. Sprinkle each with 2 tablespoons of cheese, about 1/3 cup of guacamole, 1/4 cup of lettuce leaves, and 2 tablespoons of fresh salsa. Serve immediately.Tip: If you can't find ripe avocados, you can make it even easier by buying store-bought salsa and guacamole.
