Walnut-Chicken Salad

Ingredients
4 skinless and boneless chicken breast halves
3 tablespoons buttermilk
1 cup finely ground walnuts
½ cup thin, dry breadcrumbs
1 teaspoon salt
2 tablespoons vegetable oil
6 cups chopped greens for salad
4 cups chopped fresh spinach
1 cup (4 oz) crushed colby-Monterey Jack cheese mixture
16 cherry tomatoes, halved

To make
Add a delicious crispy crust to the chicken by rolling it in a mixture of walnuts and breadcrumbs and frying it in a pan. Serve with crispy greens and a drizzle of divine buttermilk-honey dressing. The most delicious thing is that this favorite dish of Southerners is prepared in less than 10 minutes.
Place chicken between 2 sheets of thick plastic wrap; flatten to 1/4-inch thickness with a meat grinder or rolling pin. Brush the chicken evenly with buttermilk.Combine the walnuts, breadcrumbs, and salt in a shallow bowl; roll the chicken in the mixture.Pour the oil into a large skillet; set over medium-high heat until it becomes hot. Add the chicken and cook for 3 minutes on each side or until golden brown. Remove from heat; allow to cool slightly. Cut the chicken crosswise into thin slices.Combine the salad greens and spinach and arrange on each of 4 separate plates. Sprinkle with cheese and top with tomato halves and chicken. Serve with a buttermilk-honey dressing on the side.
