Ingredients
½ cup chopped red onion (from 1 small onion)
3 cups 1/4-inch-thick pitted watermelon cubes (from 1 small [about 1 1/2 pounds] watermelon)
1 (1 oz) jalapeno chili, peeled and diced (about 2 tbsp)
½ cup chopped fresh cilantro
1 teaspoon grated lime zest plus 2 tablespoons fresh juice (from 1 lime)
¾ teaspoon kosher salt

This watermelon salsa is bright, sour and fruity. Due to exposure in cold water, raw onions acquire a much milder taste. Meanwhile, the lime juice and zest balance out the sweetness of the watermelon. We love it as a sauce, but it also goes great with grilled fish or fish tacos, and it only takes 15 minutes to cook.
Soak the red onion in cold water for 10 minutes. Drain the water. Combine the onion, watermelon, jalapeno, coriander, lime zest, lime juice, and salt in a medium bowl. Serve immediately.
