1 cup unsalted butter
2 cups thickly packed dark brown sugar
¼ cup plus 2 tbsp whipped cream
2 teaspoons vanilla extract
3 ¾ cups powdered sugar

Don't like making caramel frosting? Don't worry - this is the simplest caramel frosting ever made. It takes time for it to solidify, so there is no need to rush when coating layers with glaze.
Melt the butter in a 3-quart saucepan over medium-high heat. Add the brown sugar; bring to a boil, stirring constantly. Add the whipped cream and vanilla; bring to a boil. Remove from heat and let cool for 1 hour. Transfer to a mixing bowl.Sift powdered sugar into the frosting. Beat with an electric mixer on high speed until creamy.Cook faster: This impressive cake also works well for a double-layered cake if you don't want to separate the layers. You'll have some icing left over, but we didn't mind!
