1 ½ cups mayonnaise
¼ cup water
¼ cup white wine vinegar
1 tablespoon ground black pepper
1 tablespoon creole mustard
1 teaspoon salt
1 teaspoon sugar
2 garlic cloves, minced
2 teaspoons ready-made horseradish

Many barbecue establishments in the south of the country prefer white barbecue sauce (sometimes called Alabama white barbecue sauce). This is usually a sauce based on mayonnaise, which turns out to be spicy with the addition of vinegar, horseradish and mustard. Fans of white sauce say that if you dip grilled chicken in this sauce, you will never return to red barbecue sauce. Personally, we like to add a little bit of both to a braised pork sandwich, but especially with smoked chicken, you absolutely can't beat the rich flavor of white barbecue sauce. Try it with any of your favorite barbecue dishes this summer, from sliced ribs to Texas-style brisket. This white BARBECUE sauce recipe is great for watering, but if you prefer a thicker sauce, remove some or all of the water. If you don't have creole mustard on hand or have trouble finding it at the supermarket, you can easily replace it with your favorite grainy or coarse-grained mustard.
Combine all the ingredients in a medium mixing bowl; beat until smooth. Serve with your favorite grilled dishes. Store in the refrigerator for up to 1 week.
