White Bean and Hominy Chili

Ingredients
2 cans cannellini beans or other white beans, unsalted (15 oz each), washed, dried, and divided
1 tablespoon olive oil
1 (4 oz) meatless chipotle mexican sausage (such as for home-made roasting), finely chopped
1 ½ cups chopped white onion
3 garlic cloves, minced
2 poblano chili peppers, peeled and chopped
2 teaspoons chili powder
1 teaspoon ground cumin
1 ½ cups water
2 tablespoons chopped fresh oregano
2 teaspoons hot pepper sauce (such as tabasco)
½ teaspoon salt
1 can white hominy (15.5 oz), washed and dried
2 tablespoons thinly sliced green onions
2 tablespoons chopped fresh cilantro
8 lime slices

Vegetarian Chipotle sausage turns out very tasty, giving the whole dish a piquant touch.
Mash 2/3 cup beans with a fork.Preheat a large roasting pan over medium-high heat. Pour the oil into the pan; stir to coat. Add the sausage and simmer for 4 minutes. Add the onion, garlic and poblanos; simmer for 6 minutes. Add the ground chili pepper and cumin; cook for 30 seconds, stirring constantly. Add the mashed beans, whole beans, 1 1/2 cups of water, and the following 4 ingredients (for hominy). Bring to a boil. Cover, reduce heat and simmer for 20 minutes or until slightly thickened. Add the green onions and cilantro. Serve with lime wedges.
