Whole-Wheat Spaghetti with Garlic, Parsley, and Lemon

Ingredients
8 oz wholegrain spaghetti
3 tablespoons extra-virgin olive oil, divided
½ cup minced garlic
1 ¾ cups chopped flat-leaved parsley
¾ teaspoon ground black pepper
1 tablespoon freshly grated lemon zest
¼ teaspoon kosher salt
½ oz Asiago, pecorino, or parmesan cheese, minced with a vegetable peeler
To make
Wholegrain spaghetti with garlic, parsley and lemon is an easy-to-prepare main course. This pasta dish also has a powerful flavor thanks to the lemon zest, which has a much stronger flavor than fruit juice.
Cook the pasta according to the label until al dente. Leave 3 tablespoons of cooking liquid; strain.Meanwhile, heat 2 tablespoons of oil in a large skillet over medium-high heat. Reduce the heat to low, add the garlic and cook, stirring frequently, until golden brown and fragrant (3-4 minutes). Add the parsley, pepper and lemon zest. Cook, stirring frequently, until the parsley is tender (3-4 minutes).Add the pasta and cooking liquid to the skillet with salt and the remaining tablespoon of oil. Stir until smooth. Sprinkle with cheese and serve.
