Wrap-and-Roll Sandwiches

Ingredients
4 (10-inch) flour tortillas
1 pack room-temperature goat's cheese (5.3 oz)
1 ⅓ cups chopped toasted red bell pepper, washed, seeded, dried
2 cups mixed baby greens or spinach
1 cup grated carrot

Made without cooking, these veggie wrap sandwiches are stuffed with a mix of goat cheese, roasted red pepper, herbs and carrots and are perfect for a bagged lunch or light dinner.
Place 4 tortillas on a work surface. Spread each tortilla with a generous 2 tablespoons of goat's cheese, leaving a 1/4-inch thick rim. Add 1/3 cup of sauteed bell pepper, 1/2 cup of herbs, 1/4 cup of carrots and a pinch of pepper to each one. Roll up the tortillas and cut them in half crosswise. Arrange 2 halves on each plate and serve.
