Yang Chow Fried Rice

Ingredients
2 tablespoons canola oil, divided
4 large eggs, lightly beaten and separated
¼ teaspoon freshly ground black pepper, divided
Pinch of salt
1 ¾ cups thinly sliced green onion, divided
2 teaspoons grated peeled fresh ginger
2 garlic cloves, minced
5 cups cooked short-grain rice, chilled
¼ cup low-sodium soy sauce {Check for gluten}
½ teaspoon salt
1 pack (10 oz) frozen green peas, defrosted
3 tablespoons chopped fresh cilantro

This is a vegetarian version of the classic Chinese dish, which traditionally includes shrimp and ham. Fried rice can be a stand-alone one-course meal, however, if you want a crunchy side dish, with sesame and soy peas just right. For a nice side dish, cut the cilantro into small sprigs instead of chopping it.
Heat 2 teaspoons of oil in a large nonstick skillet over medium-high heat. Add half of the eggs; stir to coat the bottom of the pan evenly. Sprinkle with 1/8 teaspoon pepper and a pinch of salt; cook for 3 minutes or until the eggs are tender. Remove the egg from the pan, cut into thin slices and set aside.Wipe the pan clean with a paper towel. Heat the remaining 4 teaspoons of oil in a skillet over medium-high heat. Add 1 cup onion, ginger, and garlic; cook, stirring, for 30 seconds. Add the remaining eggs and rice; stir-fry for 3 minutes. Add half the egg strips, remaining 3/4 cup onion, remaining 1/8 teaspoon pepper, soy sauce, 1/2 teaspoon salt, and green peas; cook for 30 seconds, stirring well. Sprinkle with the remaining egg strips and coriander.
