Yellow Squash Ribbons with Red Onion and Parmesan

Ingredients
4 medium-sized yellow courgettes (about 1/2 pound)
1 teaspoon olive oil
1 cup thinly sliced red onion
1 clove garlic, minced
¼ teaspoon salt
¼ to 1/2 teaspoon ground red pepper flakes
¼ teaspoon freshly ground black pepper
¼ cup (1 oz) chopped fresh parmesan cheese

This very light side dish can also be made with zucchini or a colorful combination of zucchini and yellow pumpkin.
Using a vegetable peeler, cut the zucchini into strips and measure out 5 cups. Remove the seeds and core from the zucchini.Heat the oil in a large nonstick skillet over medium-high heat. Add the zucchini, onion, and garlic; cook for 4 minutes or until the onion is tender, stirring gently from time to time. Remove from heat. Add salt, ground red and black pepper and mix gently. Sprinkle with cheese.
