Yogurt Rice with Cumin and Chile
Bookmark this page

Ingredients
2 sachets (8.5 oz each) of pre-cooked white basmati rice (like Uncle Ben's)
1 tablespoon canola oil
1 tablespoon crushed fresh bottled ginger
1 teaspoon cumin seeds
1 thinly sliced serrano chili
2 tablespoons chopped fresh cilantro
¾ teaspoon kosher salt
1 (6-ounce) container of plain low-fat yogurt
To make
Using whole packages of rice and yogurt saves time on measuring. Be sure to use standard yogurt; the Greek yogurt is too thick. Serve with grilled lamb chops, baked chicken or grilled salmon.
Preheat the rice according to the instructions on the package.Preheat a large skillet over medium-high heat. Add the butter; stir to combine. Add the ginger, cumin, and chili; simmer for 30 seconds. Add the rice, cilantro, salt, and yogurt; cook for 1 minute.
