Ingredients
Chicken:
4 tablespoons all-purpose flour
1 teaspoon dried italian seasoning
¼ teaspoon black pepper
4 skinless and boneless chicken breast halves (6 oz each)
1 tablespoon extra virgin olive oil
Sauce:
3 garlic cloves, minced
¼ cup low-sodium, fat-free chicken stock (or water)
Zest and juice of 1/2 lemon
¼ cup low-fat Italian dressing
1 tablespoon chopped fresh flat-leaved parsley

Preheat the oven to 350 degrees.Combine the flour, Italian seasoning, and pepper in a bowl.Dry the chicken breasts with a paper towel, then roll them in the flour mixture. Sprinkle over any excess flour.Heat the olive oil in a large skillet over medium-high heat; add the chicken breasts and cook for 3 minutes on each side or until golden brown.Remove the chicken from the pan and transfer to a heatproof pan. Bake for 10-12 minutes.About 3 minutes before the chicken is ready, prepare the sauce. Heat a skillet over medium-high heat, add the garlic and simmer for 1 minute. Add the broth and simmer until the amount is reduced by half. Add the lemon zest, juice, and dressing; cook for another minute.
